A major Cruise Line is looking for an Executive Sous Chef to join their fleet of large and luxurious ships.

Responsibilities:
* Help to manage the culinary activities in their state-of-the-art galleys
* Maintain food cost at reasonable levels, without affecting quality or standards
* Prepare international cuisine in multiple venues
* Enforce USPH and HACCP procedures for sanitation and cleanliness
* Monitoring workstations and staff for adherence to all procedures
* Manage and train large culinary staff numbers to consistently meet performance standards

Requirements:
* Managed a multicultural team in an upscale hotel, cruise ship, restaurant, or high-volume food service facility

  • French cuisine knowledge and understanding, including knowing how to make the 6 mother sauces and demi-glace

* Cruise ship experience will be beneficial but is not essential
* Prepared to be away for home for several months at a time
